Applesauce Muffins

Yield : 6 large or 12 small muffins


Ingredients:

2 cups all purpose flour (or substitute 1 ½ cup whole wheat flour + ½ cup AP flour - or use a gluten free flour blend)

1 teaspoon baking soda

1 teaspoon ground cinnamon

1 teaspoon ground ginger

½ teaspoon salt

2 tablespoons ground flax seed

6 tablespoons water

½ cup maple syrup

¼ cup olive oil

¼ cup yogurt or buttermilk (plant based or dairy)

1 cup applesauce (no sugar added)

1 teaspoon vanilla extract (optional)

½ cup raisins

¼ cup sunflower seeds


Directions:

Preheat oven to 350 degrees F

Combine flaxseed and water and let stand for 5 minutes before using. 

In a medium bowl, whisk together flour, baking soda, cinnamon, ginger and salt. 

In another bowl, stir together the maple syrup and flax seed mixture until combined. Add the oil, yogurt or buttermilk, applesauce and vanilla and stir until combined. 

Fold the flour mixture into the wet mixture until just combined. Fold in the raisins.

Fill each muffin cup with ⅔ batter. Sprinkle sunflower seeds on top. 

Bake for 14-18 minutes depending on size of muffins. They are done when a toothpick or knife inserted in the center comes out clean. 

These will keep for 3-4 days.
