Beet Brownies

With less sugar and olive oil instead of seed or vegetables oil, we share with you a still sweet but more wholesome recipe for brownies. Here's to bringing more nutrition and better ingredients into delicious baking.



Ingredients:

1.5 cup pureed beets

3 eggs

1 cup olive oil

1 cup sugar

3/4 flour

1 teaspoon baking powder

1/2 cup cocoa powder

1/4 teaspoon salt

1/2 cup pistachios (or almonds, pine nuts or walnuts!)

1 teaspoon vanilla extract 

Directions:

Preheat over to 350 degrees F

Line an 8 x 8 or 6 x 9 baking pan with parchment paper. 

Stir together eggs, olive oil and sugar until combined. Add pureed beets and stir until smooth. 

In a separate bowl whisk together flour, baking powder, cocoa powder and salt. 

Fold the flour mixture into the beet mixture until fully incorporated. 

Add the pistachios (if using) and fold into batter. 

Pour into prepared baking pan and bake for

35-40 minutes. 

Let cool completely before cutting into squares and serving.
