Autumn Glory Muffins

Ingredients:

1 ¾ cup flour

1 ½ teaspoon ground cinnamon

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt

2 eggs

¾ cup pumpkin puree

3/4 cup melted butter

¾ cup maple syrup

¾ cup shredded carrot

½ cup shredded apple

½ cup raisins

½ cup walnuts or pumpkin seeds (optional)


Directions:

Preheat oven to 350 F.

Prepare a muffin tin by greasing with butter or oil or lining with baking cups.

Melt the butter and let cool.

In one bowl, whisk together flour, cinnamon, baking powder, baking soda and salt.

Whisk the egg and stir in the butter and maple syrup. 

Add the pumpkin puree and stir to combine. 

Combine the wet ingredients with the flour mixture being sure not to overmix. 

Fold in the carrots, apple, raisins and nuts (if using).

Bake for 26-30 minutes or until a tester inserted in the center comes out clean. Turn the pan halfway through baking time for even browning.
