Candied Orange Peel

Ingredients:

4 oranges

2.5 - 3 cups sugar

5 cups water


Directions:

Remove any white pith from the peels of oranges. Cut into ¼ inch wide strips. 

Bring 1 cup of water to a boil and blanch the orange peels for 30 seconds. Strain and repeat 2 more times. 

Bring 2 cups of water and 2 cups of sugar to a boil on the stovetop. Add the orange peel and reduce to a simmer. Let peels candy in the syrup for 20-25 minutes. 

Strain the peels and let dry on a drying rack for 4-6 hours. 

Toss the peels in ½-1 cup of sugar, working in small batches, to coat the peels.
