Chocolate Strawberry Zuchinni Bread
5 x 9 inch loaf pan
Ingredients:
1.25 cup flour
0.5 cup cocoa powder
1.5 teaspoon baking powder
0.5 teaspoon baking soda
1 teaspoon cinnamon
2 eggs
0.5 cups olive oil
1 cup sugar
1 cup strawberries, diced
2 cups shredded zucchini
Directions:
Preheat the oven to 350 degrees F. Grease the loaf pan or line with parchment paper.
In a bowl, whisk together flour, cocoa powder, baking powder, baking soda and cinnamon.
In another bowl, beat the eggs lightly then add sugar and olive oil.
Fold the wet ingredients into the dry ingredients until almost combined. Add the zucchini and mix until fully incorporated.
Fold in the strawberries.
Pour the batter into the loaf pan and bake for 50 minutes or until a tester inserted in the center comes out clean.
