Classic Baba Ghanoush
Ingredients:
1 large or 2 medium eggplants
2 cloves garlic
1/4 cup tahini
4 tbsp lemon juice, and lemon zest for extra flavor
1/2 tsp salt
Olive oil, to drizzle over top
Parsley, for garnish
Directions:
Preheat oven to 400°F.
Wrap eggplant in foil and roast in over for 45mins-1hr.
When eggplant is very soft and looks shriveled, remove from oven and let cool for 10 minutes.
Cut off top of eggplant and peel off skin.
Place eggplant in food processor or blender along with tahini, garlic, lemon juice, and salt. Add zest of 1 lemon for extra flavor.
Pulse until smooth and serve with fresh veggies or naan bread
