Peach Summer Squash Cake

with Garam Masala Spices




Ingredients:

2 cups fine grated summer squash

2 cups chopped peaches, about ½ “ diced

1 cup brown sugar

½ cup olive oil

⅓ cup yogurt

3 eggs

2 cups flour

1 teaspoon baking powder

½ teaspoon baking soda

2 teaspoon garam masala spice

½ teaspoon salt

2 tablespoons sesame seed


Directions:

Preheat oven to 350 degrees F. 

Grease a 9” cake pan or  x   “ rectangle pan and grease with oil or butter. Preheat the oven to 350 degrees F.

Whisk together the dry ingredients : flour, salt, baking soda, baking powder, spice. 

Wash and grate the squash. 

Combine in a separate bowl all of the other ingredients : brown sugar, yogurt, eggs and oil. 

Fold the wet ingredients into the dry ingredients until just combined then fold in the grated squash and peaches. 

Pour the batter into the baking pan. Sprinkle the sesame seeds on top. 

Bake for 45-50 minutes or until a tester inserted into the center comes out clean.
