rhubarb BBQ Sauce

A sweet and tangy sauce made with rhubarb, oranges and a touch of spice. Perfect for adding a burst of flavor to your grilled meats and veggies and fried chicken or set out on the table as a dipping sauce.

Ingredients

3 stalks of rhubarb, cut into 1/2” slices

3 Tbsp of sugar or honey

1 tsp salt

1 tsp paprika

1 shallot, diced

2-4 cloves of garlic, minced

3 Tbsp molasses

2 oranges, zested and juiced

1 tsp Worcestershire sauce

1/2 Tbsp hot sauce (optional)

1 tsp minced fresh ginger (or 1/4 tsp dried ginger)

Instructions

  1. In a medium saucepan, combine the rhubarb, sugar, salt and paprika and 1/4 cup of water. Cook over medium heat, stirring occasionally, until the rhubarb starts to break down and release its juices, about 10 minutes. Set aside.

  2. In a separate pan, sauté the shallots and garlic for 2-3 minutes over medium heat.

  3. To the shallots and garlic pan, stir in the molasses, orange zest, orange juice, ginger and stewed rhubarb. Bring the mixture to a simmer.

  4. Add the Worcestershire sauce and hot sauce (if using). Stir well to combine.

  5. Reduce the heat to low and let the sauce simmer and let cook for 10-12 minutes.

  6. If you like a thick smooth sauce you can puree with a blender or just use the sauce as is.

This sauce can be stored in the refrigerator for up to 1 week.
