Strawberry Apricot Cobbler
Ingredients:
¼ cup coconut oil
2 cups diced strawberries
½ cup oat flower
½ cup buckwheat flour
½ cup oats
2 tbsp honey
2 tsp Fresh ginger (or 1 tsp ground ginger)
¼ tsp salt
1 tsp vanilla extract
Directions:
Preheat oven to 350ºF.
Grease an 8" square baking dish.
Mix the strawberries and apricots together and place in the baking dish.
In a mixing bowl. combine the flours, oats, honey (or sugar), ginger and salt.
Add the coconut oil and vanilla and mix until just combined.
Crumble the topping evenly over the fruit
Bake 35-45 minutes.
Serve warm.
