Vegetarian Chili

Ingredients:

2 cups kidney beans

1 cup bulghar wheat

1 cup tomato juice

2 cups water

4 cloves crushed garlic

1 ½ cup chopped onion

1 cup chopped celery

1 cup chopped carrot

2 cups whole peeled tomatoes, rough chopped. 

1 tsp cumin

1 tsp basil

1 tsp chile powder

Salt and pepper

3 tablespoons tomato paste

Olive oil

Dash of cayenne pepper


Directions:

Heat the tomato juice and water to a boil. Cook bulgar wheat for 8-10 minutes until tender. Remove from heat and set aside. 

Saute onions and garlic in olive oil for 1 minute on medium heat. Add carrots, celery and spices. Cook until tender. Add tomato paste and stir. Add whole peeled tomatoes and kidney beans and heat to warm. Fold in the bulgar wheat. Serve warm.
