Blueberry Cardamom Bread

Ingredients:

1 ½ cup sorghum flour

¾ cup oat flour

¼ cup arrowroot starch

2 teaspoons baking powder

¼ teaspoon salt

1 teaspoon cardamom

10 oz sugar

5 ¼ oz coconut oil

3 eggs

6 oz coconut yogurt

1 cup blueberries

⅓ cup sunflower seeds

Directions:

Preheat oven to 325 F.

Line a loaf pan with parchment paper or grease with oil. 

Whisk together flourss, starch, baking powder, salt and cardamom. 

Beat together coconut oil and sugar until combined. 

Add 3 eggs and beat until just combined. 

Add in coconut yogurt and beat until just combined. 

Add in flours and fold until combined. Do not overmix.

Fold in blueberries. 

Place batter in lined loaf pan and spread so the top is even. 

Sprinkle sunflower seeds on top. 

Bake for 45-50 minutes until outside is toasted golden and toothpick comes out clean.
