pumpkin seed pesto


Ingredients:

½ cup pumpkin seeds, raw

2 cups of herbs - cilantro, parsley, oregano, thyme, celery leaf

½ cup olive oil 

2 tablespoon lime juice

½ banana pepper or 1 whole jalapeno (optional to choose own spice level)

1 teaspoon salt

1-2 cloves of garlic


Directions:

Put all in a food processor and blend until pesto consistency. Serve with pastas, roasted vegetables or spread on a sandwich. 

The herb blend we used for ours here is 1 ½ cup celery leaf, 4 tablespoons oregano and 2 tablespoons thyme leaf. Served on turmeric chili roasted cauliflower.
