Canning Whole Peeled Tomatoes or Diced Tomatoes
1 - bring a large pot of water to a boil and prepare an ice bath.
2 - cut x’s in the bottom of the tomato no more than ¼” deep.
3 - drop the tomatoes into the boiling water and leave until the skin begins to peel back from where you made the slits.
4 - remove the tomatoes from the pot with a slotted spoon and drop in the ice bath.
5 - allow to cool slightly and then peel the tomatoes
6 - for whole tomatoes, pack into jars, pressing down lightly so the air bubbles are removed. Pack to 1” from the top of the jar.
7 - for diced tomatoes, chop by hand or pulse in a food processor and fill jars to 1” from the top of the jar.
8 - Bring the puree to a boil on the stovetop. Use 1 quart of puree + 1 tablespoon of lemon juice for every 4 pints of tomatoes you have packed.
9 - After the puree has simmered for 5 minutes, pour over the packed jars, using a sterlized spoon or clean skewer to insert into the jar and let the puree fill any spaces. Fill to to 1/2 “ from the top of the jar. Wipe the tops with a clean towel to be sure the rims are clean. Screw on the jar lid.
10 - Process in a boiling water bath for 45 minutes.
Canning Tomatoes and Bottling Puree
Food Mill method :
1 - wash and quarter fresh tomatoes.
2 - pass through the finest disc on the food mill.
3 - to bottle the puree, heat to 190 - 200 degrees F and let simmer for 5 minutes.
4 - Add 1 tablespoon of lemon juice for each quart of puree. Stir to combine.
5 - Pour into bottles or jars, leaving ½ inch headspace. Process in a hot water bath canner for 25 minutes.
Food processor method :
1 - bring a large pot of water to a boil and prepare an ice bath.

4 - remove the tomatoes from the pot with a slotted spoon and drop in the ice bath.
5 - allow to cool slightly and then peel the tomatoes
6 - to remove the seeds, cut the tomatoes in half and scoop out.
7 - blend the tomato flesh in the food processor until smooth.
8 - can or bottle as above in steps 3 through 5.
