Wild Blueberry Maple Preserves
Sharing with you the flavors of Maine with the Wild Blueberry Maple Jam.
Make it stand out
Ingredients:
4 cups wild blueberries
1 cup maple
1 Tablespoon Pomona’s pectin powder
1 Tablespoon lemon juice
1 Tablespoon calcium water (ingredient and directions to mix found in Pomona’s Pectin box)
Directions:
Cook blueberries on medium low heat until simmering in their juice.
Meanwhile, mix pectin powder into the maple syrup.
Add lemon juice and calcium water.
Stir in maple and pectin mix stirring consistently until fully incorporated.
Allow to return to a boil.
Turn off the heat and fill jars.
If canning, process in a hot water bath for 10 minutes.
If not canning, store in the refrigerator for up to 1 month or the freezer for up to 6 months.
