Homemade Ricotta


Ingredients:

4 cups milk

¼ teaspoon salt

2 tablespoons lemon juice

Directions:

Heat milk and salt on medium heat to 185 degrees F.

Add lemon juice and stir slowly to agitate for about 2 minutes. Continue stirring occasionally and allowing to heat on medium low for another 2-3 minutes. 

Strain through a cheesecloth lined strainer for 20 minutes. 


Whey can be saved to use in sauces, braises and bread.
