Olive Oil Zucchini Bread
Ingredients:
1 ½ cup zucchini
⅔ cup maple syrup
⅓ cup grapeseed or olive oil
⅓ cup yogurt (coconut, Greek, or plain)
2 eggs
1 teaspoon vanilla extract
1 ½ cups flour
½ teaspoon salt
½ teaspoon baking soda
½ teaspoon baking powder
1 teaspoon cinnamon
½ teaspoon allspice
Directions:
Grease a 9 x 5 inch loaf pan or line with parchment paper. Preheat the oven to 350 degrees F.
Whisk together the dry ingredients : flour, salt, baking soda, baking powder, cinnamon and spice.
Wash and grate the zucchini.
Combine in a separate bowl all of the wet ingredients : maple syrup, yogurt, eggs, oil and vanilla.
Fold the wet ingredients into the dry ingredients until just combined then fold in the grated zucchini.
Pour the batter into the baking pan. Bake for 45-50 minutes or until a tester inserted into the center comes out clean.
