Black Bean & Lima Bean Veggie Burgers

Ingredients:

½ sweet pepper, small diced

½ red onion, small diced

6 oyster mushrooms, small diced

3 garlic cloves, small diced

½ cup potato, peeled, diced and boiled

1 cup black beans

1 cup lima beans, boiled until tender

6 leaves basil

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon coriander

½ teaspoon paprika

Directions:

Saute the onions in olive oil until translucent, add sweet pepper, mushrooms and garlic and cook until done.

Mash the potato, ½ cup of black beans and ½ cup of lima beans. 

Add salt, black pepper, coriander and paprika with the remaining ½ cup lima beans and ½ cup black beans. Mash lightly to incorporate and break the beans up but not to total paste so there are still some whole pieces. Fold in the cooked sweet pepper, mushroom and onions.

Preheat oven to 400 degrees F.

Make into patties. Lightly coat in cornmeal and saute on each side for 2-3 minutes to crisp. 

Bake for 10 minutes. 

Serve warm.
