Garlic Scape Pesto
Ingredients:
1 bunch of garlic scapes (6-8 scapes)
1 bunch of parsley
1 cup olive oil
¼ cup lemon juice
1 teaspoon sea salt
½ teaspoon black pepper (optional)
Directions:
Rough chop garlic scapes and pesto. If the scapes are woody at the end, be sure to trim to their ends until the stalk is tender. Its best to take off the flower head if its bulging but ok if its still small and the scapes were harvested very young.
Puree all ingredients until smooth.
Keep in the refrigerator and use within 3 days or freeze for up to 6 months.
