Pickled Garlic Scapes

Yield:
Makes 1 quart jar 

Ingredients:

1 bunch garlic scapes

2 cups apple cider vinegar 

2 cups water

2 tablespoons kosher salt

1 teaspoon dill seed

½ teaspoon crushed red pepper

Directions:

Trim the woody ends and the flower top from the scapes.

Blanch the scapes and allow to cool. Cut them to fit the jar. 


Bring the apple cider vinegar, water and sea salt to a boil.

Put the spices in the bottom of the jar and pack with the blanched scapes.

Pour the brine over the scapes, leaving ½ inch of headspace from the top of the jar. 

If canning, process in a hot water bath for 15 minutes. 

If refrigerating, allow jar to cool on the countertop and refrigerate. Use within 1 month.
